It's been rainy and cold the past week... and when its rainy and cold I love to bake. And make soup. I tried out a couple of new recipes this week and they are both fabulous... so I'm sharing my newest finds.
Got this soup recipe from Becky Higgins blog... the soup is awesome! Made a huge pot and we ate it for several meals. soooooooo good!!
6 Tbsp. butter
1 medium onion, chopped
3 Tbsp. flour
2 tsp. salt
1 tsp. pepper
6 c. chicken broth
1 lb. mushrooms, sliced
3/4 c. sliced celery
3/4 c. chopped carrots
2 c. quartered baby red potatoes
1 c. chopped yellow squash (didn't have any so I didn't add it)
1 1/2 c. frozen corn kernels, thawed
2 tsp. thyme (didn't have any so I didn't add it)
2 c. light cream
3/4 c. grated Parmesan, plus more for garnish if desired
2 c. chopped cooked chicken (used canned chicken from Costco.... rotisserie would be awesome!)
In a large post, melt the butter over medium heat. Add the onion and saute until tender, about 6 minutes. Stir in the four, salt, and pepper and mix until smooth. Gradually add the broth, then turn the heat up to medium-high and bring the soup to a boil. Add the mushrooms, celery, carrots, potatoes, squash, corn, and thyme. Reduce the heat and simmer the soup, covered, until the vegetables are tender, about 30 minutes.
Add the cream, Parmesan, and chicken. Heat the soup for an additional 10 minutes, but do not let it boil. To serve, ladle the soup into a bowl and sprinkle it with more Parmesan, if desired. Makes about 15 cups.

Drop Dead Easy Chocolate Chip CookiesThese cookies are the best and are easy to make. There are four secrets:
1) hand-mix everything (you can use a mixer to cream the sugar and fat but don’t use a mixer on any other step)
2) don’t over-cook the cookies (They should be slightly brown and should cook the rest of the way on the stone)
3) use real butter
4) use a baking stone.
Drop Dead Easy Chocolate Chip Cookies
Preheat oven to 375 degrees.
Ingredients:
* 1/2 C sugar
* 1/2 C brown sugar
* 1/3 C butter (melted and cooled slightly)
* 1/3 C shortening
* 1 egg
* 1 tsp vanilla
* 1 1/2 C flour
* 1/2 tsp baking soda
* 1/2 tsp salt
* 6 oz milk chocolate chips
Mix sugars, butter, shortening, egg and vanilla in a mixer. Sift flour,
baking soda and salt together. Combine ingredients and mix by hand. Add chocolate and stir to combine. Roll dough into walnut-sized balls and bake on baking stone for 10 minutes (they will look undercooked). Makes 24 cookies.
