May is my absolute favorite month of the year... it's my birthday month, its Memorial Day... it means summer is here... school is out (doesn't really apply to me anymore but cool nonetheless)... we celebrate our great mom's... we bbq... graduations... longer nights... fireflies.... warm humid nights! I just love May!!
So here's to the Month of May and all that is great and grand in the world!
And speaking of bbq's our friends had us over for one of the funnest nights ever last night... I'll post with pictures later... but they served this amazing Potato Salad... straight from my favorite cookbook ... the Essential Mormon handbook... Mormon or not this is a GREAT cookbook... even my husband who has NO use for Potato Salad thought this stuff was great!
So until next time I leave you my new favorite Potato Salad Recipe...
PotatoSalad
5 pounds red potatoes
1/4 cup diced bell pepper
1 green onion,finely chopped
1/4 pound bacon strips, cooked and crumbled
2 cups mayonnaise
1 teaspoon thyme
1 teaspoon salt
1 teaspoon pepper
1/4 cup vinegar
1/4 cup sugar
In a large saucepan, cover potatoes with water. Bring water to a boil; cover and reduce heat.
Simmer 2o to 25 minutes or until potatoes are just tender. Drain. When cool, cut potatoes in to bitesized pieces. Stir in bellpepper, chopped onion,and bacon. Combine remaining ingredients in a bowl. Pour over potato mixture and stir gently until well coated.Refrigerate until serving time. Makes 12 servings.
